Spicy Ginger Cookies

I'm generally not a fan of spicy food, as a girl who would be content eating nothing but plain pasta and oatmeal, but ginger cookies are an exception.
Mose ginger cookies I've had are nice, but not quite spicy enough for my liking, so, logically, I went and made my own, and made them CRAZY. Of course, if you're not up for the challenge, you can always cut back on the spices, but trust me, it's definitely worth it to go all the way.







Spicy Ginger Cookies:
2.5 Cups of Flour
1 tsp. Baking Soda
3 tsp Ground Ginger (Oh yeah, this is the start of the spice :D )
1.5 tsp Nutmeg (freshly grated/ground is best, but use whatever you've got)
1 tsp. Cinnamon
1.5 tsp. Black Pepper
Small piece of Ginger, diced( I guess if I had to quantify it, it'd be about 4 tablespoons)
1/2 Cup of Butter
1.5 Cups of Sugar (plus extra for sprinkling)
1 Egg
1/2 - 1 Cup of Molasses
1/2 tsp. Vanilla

Preheat oven to 350 degrees Fahrenheit
Cream together the Butter and Sugar. Then add the Molasses, Vanilla, and Egg, and beat until it's lighter in color and somewhat fluffy. At this point, I add in my spices and diced ginger, but if you'd like to sift yours in with the Flour and Baking Soda, that works too :) Then add in the Flour and mix until incorporated. As usual, I like to chill my dough for at least an hour.
Once the dough is ready, you can either roll it into little balls (pressing down on them slightly), or roll out the dough and cut it into fun shapes. Sprinkle with sugar (raw sugar is best, but don't feel bad about using regular sugar, it's what I use !)
Either way, bake the cookies for about 10-15 minutes, cool, and enjoy.
Just be sure to have a glass of milk on hand, as they're a bit of a surprise.
And if you're making them for children, definitely cut back on the spices :P

Chocolate Chip Cookies...KS style.

Out of all the things I bake and cook, these cookies are the only thing that I can make in my sleep. It's gotten to the point where I don't measure half of what I put in, but I'll try and quantify it for you guys :)

Back in high school, in photo and art class, whenever we had our class critiques, we always brought food and made a party out of it. If I didn't bring these cookies, my head would be on a pike! So I'll go out on a limb and say they're pretty darn good ;D


Chocolate Chip Cookies:
1.5 Sticks of Butter (that's 3/8ths of a cup)
1.5 Cups of Sugar
2 Eggs
2.5 Cups of Flour
1/2 Cup of Molasses
1 tsp. Baking Soda
1 tsp. Salt
1 tbsp. Vanilla
2 tbsp. Cinnamon
1/2 Cup Semi-sweet Chocolate Chips
1 Cup Milk Chocolate Chips

Preheat the oven to 350 degrees Fahrenheit.
Cream together the Butter and Sugar. While the mixer is going, add in the Molasses. Then add the Eggs, and continue to beat until the mixture has lightened in color a little. Add the Vanilla.
Add about half of the Flour, and when that's fully incorporated, add in the chocolate chips. Then add the rest of the flour.
You probably want to let this dough chill for a bit.

After it's chilled, roll into balls, and slightly flatten on the sheet.
Bake for about 15 minutes, or until the edges are slightly browned.

Yay, chocolate chip cookies!
